Country Gravy & Grits Peppers


TOTAL TIME: 30 Minutes

COOK TIME: 10 Minutes


3/4 cup Quick Grits
1 package Pioneer Country Gravy Mix
1/4 tsp. Salt
2 cups Monterey Pepper Jack Cheese, shredded, divided
12 each Mini Bell Peppers, cut in half and deseeded

Preparation Instructions:

1. Preheat oven to 350oF.
2. In a large saucepot, prepare Pioneer Country Gravy Mix to package instructions. Add an additional 2 cups of water. Slowly bring the mixture to a simmer.
3. Add grits and bring to a simmer while stirring consistently.
4. Cook for 5 to 7 minutes on low heat. Fold in 1 cup pepper jack cheese and allow to cool slightly.
5. Place a spoonful of grits in the cavity of each bell pepper and top with remaining cheese.
6. Bake for 5-10 minutes or until cheese is melted and golden brown.
