1 pkg. Pioneer Country Gravy Mix
1-13.5 oz. can Coconut mil
2 pc. Garlic cloves, minced
¼ tsp.     Ginger, ground
2 tbsp. Thai red curry paste
1 lb. Chicken breast, cubed
1 pc. Onion, diced
1 pc. Red bell pepper, sliced
1 pc. Carrot, peeled and sliced

Preparation Instructions

  1. PREPARE the Thai-style curry in a large bowl by whisking the Pioneer Country Gravy Mix, coconut milk, garlic, ground ginger, and Thai red curry paste until thoroughly incorporated.  Pour into the Instapot.
  2. ADD the chicken, onion, red bell pepper, and carrot into the sauce mixture and stir.
  3. PRESSURE COOK on HIGH for 10 minutes.
  4. SERVE over prepared rice.
