Back-to-School Ranger Cookies

Ranger Cookies are full of good things like old-fashioned oats, toasted pecans, chewy coconut, and crisp rice cereal.

Ingredients

1/2 cup butter, softened
1/2 cup margarine, softened
1 cup granulated sugar
1 cup dark brown sugar, packed
2 large eggs
2 tbsp. honey
2 tbsp. milk
2 tsp. vanilla extract
1 tsp. ground cinnamon
3 1/2 cups Pioneer Original or Buttermilk Baking Mix
2 1/2 cups old-fashioned rolled oats
1 1/2 cups crisp rice cereal
1 cup pecans, chopped, toasted
1 cup coconut
1/2 cup sunflower seeds

Preparation Instructions

  1. In large mixing bowl, beat butter, margarine, granulated sugar and brown sugar until light and fluffy. Add eggs, honey, milk, vanilla and cinnamon; mix well to combine.
  2. Slowly add Pioneer Baking Mix and oats, mix on low speed to combine. Stir in rice cereal, pecans, coconut and sunflower nuts. Cover; chill dough for at least 1 hour.
  3. Heat oven to 350°F. Place tablespoons of dough on baking sheet coated with nonstick cooking spray. Bake for 10 to 12 minutes or until golden brown, but still slightly soft in center.
  4. Cool on baking sheet for 5 minutes. Remove to wire rack to cool completely.
