Curried Shrimp


TOTAL TIME: 20 Minutes

COOK TIME: 10 Minutes


12 oz. cooked shrimp
2 1/2 cup chicken stock
1 1/2 cup coconut milk
1 pkg. Pioneer Biscuit Gravy Mix
1 tbsp. olive oil
1 diced onion
1 diced bell pepper
2 diced carrots
1 1/2 tbsp. curry powder
1 tsp. chili flakes
2 cup cooked rice
1 bunch sliced green onions

Preparation Instructions:

1. In a large sauce pan sauté the onion, bell pepper and carrots until tender.
2. In a separate container mix together the coconut milk, stock, Pioneer Brand Biscuit Gravy Mix, curry powder and chili flakes.
3. Pour curry mixture over sautéed vegetables and simmer for 10 minutes. Turn the heat off and fold in the cooked shrimp. Allow shrimp to warm through. Serve over steamed rice and garnish with thinly sliced green onions.
