1. Preheat conventional oven to 375˚F and prepare a 13×9 inch casserole dish with non-stick spray. Set aside.
2. Prepare Pioneer Roasted Chicken Gravy, per package instructions, set aside.
3. Saute onions and poblanos in oil until softened. Add chicken, garlic, and cilantro and sauté for one minute longer.
4. Add prepared gravy to chicken mixture and stir to combine, then add to prepared casserole dish.
5. Prepare Pioneer Yellow Cornbread Mix batter by adding the egg and milk, per package instructions, and mixing with a spoon until combined.
6. Add the batter to the casserole dish and spread it on top of the chicken and gravy mixture.
7. Bake 20-25 minutes, until golden brown, and serve.
Tip: Great way to utilize leftover chicken.
