CORNBREAD AND CORN STICKS

INGREDIENTS

  • 1 cup Pioneer White Corn Meal
  • 1/3 cup flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup milk
  • 1 egg, beaten
  • 3 tbsp. vegetable oil or shortening
  • 1 tsp. sugar (optional)

PREPARATION

  • PREHEAT oven to 450F. Oil an 8-inch round cake pan.
  • COMBINE White Corn Meal and dry ingredients into a bowl.
  • ADD milk and egg; Stir.
  • ADD oil or shortening;
  • MIX throughly.
  • POUR into prepared pan.
  • BAKE 20-25 minutes or until golden brown.

 

For Corn Sticks: Oil and preheat pans before filling. Bake in preheated oven at 450F for 125-20 minutes. Yields 6-8 pieces

CORN MUFFINS

INGREDIENTS

  • 1 cup Pioneer White Corn Meal
  • 1 cup flour 1/4 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg beaten
  • 1 cup milk
  • 3 tbsp. vegetable oil or shortening

PREPARATION

  • PREHEAT oven to 450F.
  • OIL muffin pan generously.
  • COMBINE White Corn Meal and dry ingredients in a bowl.
  • MIX egg and milk in a separate bowl;
  • COMBINE with dry ingredients.
  • SITE in vegetable oil;
  • MIX thoroughly.
  • POUR into prepared pan.
  • BAKE 20-25 minutes or until golden brown. Yield 6-8 muffins.
