Coffee Cake Donuts are the kind of treat that turns an ordinary morning into something worth getting out of bed for early. That familiar cinnamon crumble topping you love on coffee cake wrapped around a soft, golden donut — it is exactly as good as it sounds.

Ingredients
For Donuts:
2 pkgs (6 oz) Sweet Cream Waffle & Pancake Mix
1/2 cup whole milk
1/4 cup sour cream
1/2 cup granulated sugar, divided
2 large eggs
2 tbsp unsalted butter, melted
1 tsp pure vanilla extract
1 tsp ground cinnamon
For topping:
1/2 cup all-purpose flour
1/3 cup light brown sugar
1 tsp ground cinnamon
3 tbsp unsalted butter, cold cubed
For glaze:
2 cups powdered sugar
2-3 tbsp whole milk
1/2 tsp pure vanilla extract
These Coffee Cake Donuts come together beautifully with Pioneer® Sweet Cream Waffle Mix, delivering bakery-style flavor and that signature crumbly topping without any complicated technique.
Instructions
- Preheat and Prep Donut Pans
Preheat conventional oven to 350°F. Lightly grease 2, 6-cup donut pans with cooking spray and set aside.
- Mix the Donut Batter
For donuts: Combine Pioneer Sweet Cream Waffle Mix, milk, sour cream, sugar, eggs, melted butter and vanilla in large bowl until just combined. Transfer about 1/3 of batter to a separate small bowl and add cinnamon, mixing until smooth.
- Swirl and Bake Donuts
Alternate spooning batter into prepared pans with vanilla and cinnamon mixtures in small dollops. Swirl batter together using toothpick or skewer. Bake until donuts are light golden-brown and bounce back when gently touched, about 10-12 minutes. Let donuts cool in their pan, then transfer to wire rack to cool completely.
- Make the Streusel Topping
For topping: Combine flour, brown sugar and cinnamon in medium bowl. Add butter and cut in using pastry knife or fingertips until coarse crumbs form.
- Bake the Streusel
Spread streusel mixture in an even layer onto parchment-lined, rimmed baking sheet. Bake until streusel is golden-brown and slightly crisp, about 10-15 minutes. Remove from oven and let cool completely on pan.
- Mix the Glaze
For glaze: whisk together powdered sugar, milk and vanilla in small bowl until smooth.
- Glaze and Top the Donuts
Dip donuts into vanilla glaze, allowing any excess to drip off, then place back onto wire rack. While glaze is still wet, top donuts evenly with streusel and let set at least 10 minutes before serving.
