Banana Poppy Seed Bread Recipe

Ingredients
3 cup Pioneer® Original Biscuit & Baking Mix or Pioneer Buttermilk Biscuit & Baking Mix
1/2 cup granulated sugar
2 tbsp poppy seeds
1 cup low-fat yogurt, plain
1 cup very ripe bananas (about 3 small), mashed
2 large egg whites
1/4 cup vegetable oil
1 tsp vanilla extract

Instructions
- Preheat and Prep Pan
Preheat oven to 350°F. Oil and flour a 9 x 5 x 3-inch loaf pan.
- Mix and Pour Batter
Combine Pioneer Baking Mix, sugar and poppy seeds in a mixing bowl. Combine yogurt, bananas, egg whites, oil and vanilla; add to dry ingredients. Stir just until moistened. Pour batter into prepared pan.
- Bake Until Done
Bake 50 to 55 minutes until toothpick inserted in center comes out clean.
- Cool and Unmold
Cool in pan on a wire rack 10 minutes. Remove from pan and cool completely.
