Croque Madame Recipe
Croque Madame is the French cafe classic that makes any weekend brunch feel deliberately special — layers of ham and melted Gruyere between golden, béchamel-soaked bread, crowned with a perfectly runny fried egg that brings the whole thing together in one very good bite.

Ingredients
2 strips diced bacon
2 1/4 cup milk
1 pkg (6 oz.) Pioneer® Buttermilk Biscuit & Baking Mix
1 cup shredded white cheese
4 ea sliced and toasted sourdough bread
2 tbsp butter
4 ea eggs
This Croque Madame Recipe uses Pioneer Baking Mix to achieve the golden, tender toast base that supports every layer of this iconic French sandwich and makes brunch at home something genuinely worth waking up for.
Instructions
- Cook the Bacon
Cook bacon in a medium sauce pot over low heat until crispy.
- Mix Milk and Baking Mix
In separate measuring container, combine milk and Pioneer Baking Mix. Stir until no lumps remain.
- Thicken the Sauce
Cover bacon with milk mixture and cook until thickened.
- Melt in Cheese
Turn off heat and fold in cheese. Let cool.
- Toast the Bread
Toast sourdough in butter on both sides until golden brown and place on a plate.
- Fry the Eggs
Using the same pan, fry eggs to preferred “doneness”.
- Assemble and Top
Slide eggs off of pan onto toast, then slather with the cheese mixture.
