Hearty Beef Burger and Vegetable Soup Recipe

Beef burger soup is the thrifty, deeply satisfying weeknight meal that proves leftover burgers deserve better than being reheated alone — cooked burger patties cut into hearty chunks and simmered in a rich brown gravy broth with frozen vegetables until everything is tender and the whole pot smells like a slow Sunday afternoon. This is the soup that turns leftover grilled beef into something worth requesting.

Ingredients

4 cups Pioneer® Brown Gravy Mix, prepared
1 tbsp Thyme, fresh (or 1 tsp. if using dried)
1 cup Water or beef stock
5 Cooked beef burger patties, cut into one-inch pieces
1 clove Garlic, minced
1 lb Frozen vegetables

This Hearty Beef Burger and Vegetable Soup uses Pioneer Brown Gravy Mix to build the rich, savory broth that transforms simple ingredients into a thick, filling soup that tastes far more developed than the time it takes to make.

Instructions

  1. Prepare the Brown Gravy

Prepare Pioneer Brown Gravy, per package instructions in a medium sized pot.

  2. Add Remaining Ingredients

Add thyme, water or stock, cooked burger pieces, garlic, and frozen vegetables. Bring to boil then reduce heat to simmer.

  3. Simmer and Season

Simmer for 10 minutes and season (salt and pepper) as desired. Tip: This is a great way to utilize extra cooked burger patties.
