Pumpkin Stuffed Cupcakes Recipe

Stuffed Pumpkin Cupcakes are the fall baking surprise that people talk about for the rest of the season — a warmly spiced pumpkin cupcake hiding a sweet cream cheese center that reveals itself only when you bite in. They are the kind of recipe that looks far more impressive than the effort involved.

Ingredients

3/4 cups whole milk
2 large eggs
1/4 cup vegetable oil
4 tsp pure vanilla extract, divided
2 cups Pioneer® Pumpkin Spice Pancake Mix
1/3 cup granulated sugar
1 tsp ground cinnamon, divided
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 cup graham cracker crumbs, for garnish

These Pumpkin Stuffed Cupcakes are made with Pioneer Pumpkin Spice Pancake Mix for the perfectly moist, spiced crumb that makes these filled pumpkin cupcakes the most exciting thing to come out of your oven all autumn.

Instructions

  1. Preheat and Prep Pan

    Preheat oven to 350°F. Line a 12-cup muffin pan with cupcake liners. Set aside.

  2. Mix and Bake Cupcakes

    Whisk milk, eggs, oil, and 2 teaspoons of vanilla together in a large bowl. Add in Pioneer Pumpkin Spice Pancake Mix, sugar, and 1/2 teaspoon of cinnamon and whisk until combined. Fill each muffin cup until 3/4 full. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

  3. Make Cream Cheese Frosting

    Meanwhile, using a hand mixer, beat together cream cheese and butter in a large bowl until smooth. Slowly add in powdered sugar, remaining vanilla and remaining cinnamon, and beat until incorporated.

  4. Fill and Frost Cupcakes

    Allow cupcakes to cool completely. Using an apple corer or sharp paring knife cut a 1/2-inch circle into the top of each cupcake, to create a small cavity. Remove the excess cupcake and fill each cavity with the cream cheese mixture. Place remaining cream cheese mixture into a piping bag and pipe frosting onto each cupcake top. Garnish with graham cracker crumbs, and serve.
