Ranger Cookies Recipe

Back-to-School Ranger Cookies are the lunchbox legend — hearty, chewy cookies packed with oats, coconut, chocolate chips, and crispy rice cereal that give every bite crunch, chew, and sweetness all at once. These are the cookies that disappear from the cookie jar before the school week is halfway through.

Ingredients

1/2 cup butter, softened
1/2 cup margarine, softened
1 cup granulated sugar
1 cup dark brown sugar, packed
2 large eggs
2 tbsp honey
2 tbsp milk
2 tsp vanilla extract
1 tsp ground cinnamon
3 1/2 cups Pioneer® Original Biscuit & Baking Mix or Pioneer Buttermilk Biscuit & Baking Mix
2 1/2 cups old-fashioned rolled oats
1 1/2 cups crisp rice cereal
1 cup pecans, chopped, toasted
1 cup coconut
1/2 cup sunflower seeds

This Ranger Cookies Recipe uses Pioneer Original or Buttermilk Baking Mix for the perfectly sturdy, chewy base that holds all those add-ins together and makes these classic back-to-school cookies a batch worth doubling every time.

Instructions

  1. Cream Butter and Sugars

    In large mixing bowl, beat butter, margarine, granulated sugar and brown sugar until light and fluffy. Add eggs, honey, milk, vanilla and cinnamon; mix well to combine.

  2. Add Mix-Ins and Chill

    Slowly add Pioneer Baking Mix and oats, mix on low speed to combine. Stir in rice cereal, pecans, coconut and sunflower nuts. Cover; chill dough for at least 1 hour.

  3. Scoop and Bake

    Heat oven to 350°F. Place tablespoons of dough on baking sheet coated with nonstick cooking spray. Bake for 10 to 12 minutes or until golden brown, but still slightly soft in center.

  4. Cool Completely

    Cool on baking sheet for 5 minutes. Remove to wire rack to cool completely.
