Ingredients

Hand Pie Dough
1 cup Milk
3 cups Pioneer® Buttermilk Biscuit & Baking Mix
BBQ Chicken Filling
8 ounces Chicken, cooked and shredded
1/4 cup BBQ Sauce
8 ounces Cheddar Cheese, shredded, divided
Egg Wash
2 Eggs
1/4 cup Water

These Southern Style BBQ Chicken Hand Pies use Pioneer Buttermilk Biscuit and Baking Mix for the flaky, golden dough that holds all the smoky BBQ chicken and melted cheese inside a tender, handheld pie that bakes perfectly every time.

Instructions

  1. Preheat Oven

    Preheat oven to 400°F.

  2. Form Hand Pies

    To form hand pie, in a large bowl, mix together Pioneer Buttermilk Baking Mix and water until a dough forms, then transfer to a lightly floured surface and knead 3-4 times.

  3. Roll and Cut

    Roll the mixture out to 1/8-inch thick and cut into rounds using a 4-inch cutter.

  4. Prepare Filling

    To prepare the BBQ Chicken filling, fold all ingredients together in a small bowl until evenly combined.

  5. Make Egg Wash

    To make the egg wash, whisk eggs and water together until an even consistency.

  6. Brush Pies

    Brush egg wash on half of the rounds.

  7. Coat with Filling

    Place 2-3 tablespoons of filling on the egg-washed rounds.

  8. Stretch Rounds

    Lightly stretch the remaining rounds over the filling to cover the edges of the bottom round.

  9. Crimp Pie Edges

    Crimp the edges of each pie together using a fork.

  10. Sprinkle with Sugar

    Top sweet hand pies with decorative sparkling sugar.

  11. Bake

    Bake for 10-15 minutes or until golden brown.
