Mashed Potato Croquettes with Gravy Recipe

Ingredients
2 cups water
1 pkg Reduced Sodium Brown Gravy Mix
2 cups mashed potatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
1/2 cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Vegetable oil, for frying

Instructions
- Make the Brown Gravy
Combine water and Pioneer Brown Gravy Mix in a saucepan and whisk until smooth. Bring mixture to a boil over medium heat, stirring frequently. Reduce heat to low and simmer for 1 minute until thickened. Remove from heat and set aside.
- Mix and Shape Croquettes
Combine potatoes, cheese and green onions in a medium bowl. Scoop mixture into 1-inch round balls.
- Set Up the Breading Station
Place flour, egg and breadcrumbs into 3 separate shallow bowls. Add garlic powder, salt, and black pepper to breadcrumbs and mix to combine.
- Bread the Croquettes
Dredge each potato ball in flour, dip in egg, then coat with breadcrumb mixture. Set aside.
- Fry Until Crispy
Heat about 1/2-inch of vegetable oil in a deep heavy-bottomed skillet over medium heat. Gently place croquettes into hot oil in batches. Fry until golden-brown and crisp, about 2-3 minutes per side. Set onto a paper-towel-lined plate to drain. Serve warm with gravy for dipping.
