Mashed Potato Croquettes with Gravy Recipe

Ingredients

2 cups water
1 pkg Reduced Sodium Brown Gravy Mix
2 cups mashed potatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
1/2 cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Vegetable oil, for frying

These Mashed Potato Croquettes with Gravy use Pioneer® Reduced Sodium Brown Gravy Mix for the smooth, rich dipping sauce that makes every crispy croquette even better and keeps all the flavor without the extra salt.

Instructions

  1. Make the Brown Gravy

    Combine water and Pioneer Brown Gravy Mix in a saucepan and whisk until smooth. Bring mixture to a boil over medium heat, stirring frequently. Reduce heat to low and simmer for 1 minute until thickened. Remove from heat and set aside.

  2. Mix and Shape Croquettes

    Combine potatoes, cheese and green onions in a medium bowl. Scoop mixture into 1-inch round balls.

  3. Set Up the Breading Station

    Place flour, egg and breadcrumbs into 3 separate shallow bowls. Add garlic powder, salt, and black pepper to breadcrumbs and mix to combine.

  4. Bread the Croquettes

    Dredge each potato ball in flour, dip in egg, then coat with breadcrumb mixture. Set aside.

  5. Fry Until Crispy

    Heat about 1/2-inch of vegetable oil in a deep heavy-bottomed skillet over medium heat. Gently place croquettes into hot oil in batches. Fry until golden-brown and crisp, about 2-3 minutes per side. Set onto a paper-towel-lined plate to drain. Serve warm with gravy for dipping.
