Sheet Pan Pork and Vegetables Recipe
Sheet Pan Pork and Vegetables is the weeknight dinner that proves the best meals do not always require the most dishes. Seasoned pork and colorful vegetables roasted together on a single pan until everything is caramelized and tender — cleanup is almost as satisfying as the meal itself.

Ingredients
1 (2 lb) boneless pork tenderloin
1/2 cup olive oil, divided
1 (2 oz) pkg Pioneer® Smoky BBQ Pulled Pork Seasoning Mix
1/2 lb Brussels sprouts, halved
2 tsp kosher salt
1 tsp ground black pepper
1 large turnip, chopped
2 large carrots, chopped
2 cups water, divided
1 (2 oz) pkg Pioneer® Brown Gravy Mix
Fresh parsley, for garnish

Instructions
- Preheat and Prep Pan
Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
- Season and Place Pork
Rub loin evenly with 3 tablespoons of olive oil and Pioneer Smoky BBQ Pulled Pork Seasoning Mix. Transfer to the prepared baking sheet.
- Toss and Add Vegetables
Combine turnips, carrots, Brussels sprouts, salt, pepper and remaining olive oil in a large bowl, and toss to coat. Transfer vegetables to the prepared baking sheet, spreading evenly around the pork loin.
- Roast Until Done
Cook 30-35 minutes, or until an internal temperature of 145°F is reached.
- Rest the Pork
Allow pork to rest at room temperature at least 5-10 minutes before slicing.
- Make and Serve Gravy
Meanwhile, bring 1 1/2 cups of water to a boil over high heat. Whisk together Pioneer Brown Gravy Mix and remaining water in a small bowl. Pour gravy mixture into the boiling water, whisking constantly until completely smooth and thickened, about 1 minute. Garnish with parsley, and serve with gravy.
