Breakfast Pot Pie Recipe
Breakfast Pot Pie is the morning version of a classic comfort dish — eggs, sausage, and vegetables baked under a golden, flaky crust in a format that is hearty enough to be called a proper meal. Pull it out of the oven on a weekend morning and it transforms breakfast into something worth sitting down for.

Ingredients
1/2 ea large yellow onion
2 cup frozen hash brown potatoes
1 cup sliced mushrooms
1 tbsp butter
1/2 lb cooked and crumbled breakfast sausage
12 ea cooked scrambled eggs
1/2 cup chopped pickled jalapenos
1 cup shredded Cheddar cheese
2 cup prepared Pioneer® Peppered Gravy Mix
1/4 lb cooked chopped bacon
2 cup Pioneer Original Biscuit & Baking Mix
3/4 cup milk
6 ea green onions, white and light green parts, sliced thinly
This Breakfast Pot Pie Recipe uses Pioneer Peppered Gravy for the rich, spiced filling that makes this hearty morning bake a deeply satisfying, flavor-packed breakfast that puts the whole table in a good mood.
Instructions
- Heat Butter in Skillet
Heat butter in a large non-stick skillet over medium heat.
- Sauté the Vegetables
Mix together onion, potatoes and mushrooms and add to the pan. Sauté over medium heat for 10 minutes, until lightly browned. Shake pan occasionally to prevent burning.
- Preheat the Oven
Preheat oven to 450°F.
- Grease the Baking Pan
Grease a 9″ x 13″ pan.
- Mix the Filling
Mix together hash brown mixture, sausage, eggs, jalapenos, cheese and gravy.
- Pour Into Pan
Add mixture to pan.
- Make the Biscuit Topping
Mix together Pioneer Baking Mix, milk and bacon. Crumble mixture loosely over the top of the ingredients in the pan.
- Bake Until Golden
Bake for 25 to 30 minutes, or until top is nicely browned and biscuit mixture is baked all the way through.
- Garnish and Serve
Top with sliced green onions and serve immediately.
