Shepherd’s Pie Casserole Recipe
Shepherd’s Pie Casserole is the kind of deep, savory comfort food that makes you glad you decided to cook at home tonight. Ground beef and vegetables in a rich, dark gravy topped with fluffy mashed potatoes — baked until golden and bubbling at the edges.

Ingredients
2 cups water, divided
1 pkg Pioneer® Brown Gravy Mix
1 lb ground beef
3 cups frozen peas and carrots, or mixed vegetables
4 cups mashed potatoes, kept warm
2-3 tbsp unsalted butter, melted, for brushing
2 tbsp chopped fresh parsley, plus more for garnish

Instructions
- Preheat and Prep Dish
Preheat conventional oven to 375°F. Lightly grease 9×13-inch baking dish and set aside.
- Make the Brown Gravy
Bring 1 1/2 cups of water to boil over high heat. Meanwhile, whisk together Pioneer Brown Gravy Mix and remaining water in small bowl. Pour gravy mixture into boiling water, whisking constantly until completely smooth and thickened, about 1 minute. Set aside to cool slightly.
- Brown the Beef
Cook beef in large skillet over medium heat, breaking up into small crumbles with wooden spoon, until beef is browned, about 5-7 minutes. Remove from heat and stir in frozen peas and carrots and gravy.
- Top with Mashed Potatoes
Transfer beef filling mixture to prepared baking dish. Top evenly with mashed potatoes. Brush tops of potatoes with melted butter. Bake until potatoes are light golden-brown and edges are bubbling, about 20-25 minutes.
- Cool, Garnish, and Serve
Let casserole cool for at least 10 minutes before serving. Garnish with parsley and serve. Tip: Make mashed potatoes by placing peeled and cubed potatoes in large pot and covering with cold water. Bring to boil over medium-high heat. Cook until tender, about 15-20 minutes. Drain potatoes and return to pot. Add milk and butter and mash until smooth and creamy. Season with salt and pepper, to taste.
