Mashed Potato Stuffed Meatloaf Recipe

Ingredients
1 tbsp olive oil
1 large yellow onion, sliced
1 cup button mushrooms, sliced
1 1/2 cups mashed potatoes
1 1/2 lb ground beef
3/4 cup bread crumbs
1/2 cup ketchup
2 large eggs
1 (1.63 oz) pkg Pioneer® Ancho Beef Stew Seasoning Mix
2 cups water, divided
1 (1.41 oz) pkg Pioneer® Roasted Turkey Gravy Mix
Fresh parsley, for garnish
This Mashed Potato Stuffed Meatloaf recipe uses Pioneer Ancho Beef Stew Seasoning Mix for the bold, smoky depth that takes this hearty mashed potato stuffed meatloaf from ordinary to the centerpiece of any comfort-food dinner.
Instructions
- Preheat and Prep Pan
Preheat the oven to 350°F. Lightly grease a 9×5-inch loaf pan with cooking spray.
- Make Potato Filling
Heat oil in a large skillet over medium heat. Add onions and cook until translucent. Stir in mushrooms and cook until caramelized and browned, about 5-7 minutes. Transfer onions and mushrooms to a medium bowl. Add mashed potatoes and mix to combine. Set aside.
- Mix the Meat
Mix together beef, bread crumbs, ketchup, eggs and Pioneer Ancho Beef Stew Seasoning Mix in a large bowl until combined.
- Stuff and Bake Meatloaf
Press 3/4 of the meat mixture into the bottom of the prepared pan and up each side, leaving an indentation in the center. Fill the indentation evenly with the mashed potato mixture and cover with remaining meat mixture. Bake for 60 to 65 minutes, or until internal temperature reaches 160°F. Rest at least 10 minutes before slicing.
- Make the Gravy
Meanwhile, bring 1 1/2 cups of water to a boil over high heat. Whisk together Pioneer Roasted Turkey Gravy Mix and remaining water in a small bowl. Pour gravy mixture into the boiling water, whisking constantly until completely smooth and thickened, about 1 minute.
- Garnish and Serve
Garnish meatloaf with parsley and serve warm with gravy.
