Beef Stroganoff Recipe
Beef Stroganoff is the weeknight dinner that sounds impressive but actually comes together in about 30 minutes with very little fuss. Tender strips of beef in a creamy, savory mushroom sauce over egg noodles — this is one of those classics that never goes out of style.

Ingredients
1 pkg Pioneer® Brown Gravy Mix, prepared
1 1/2 lbs boneless beef sirloin, thinkly sliced
10 oz mushrooms
1 large onion, chopped
3 tbsp butter
2 tbsp ketchup
1 bay leaf
1 1/2 cups sour cream or plain Greek yogurt
Cooked egg noodles
This Beef Stroganoff Recipe uses Pioneer Brown Gravy Mix to build the rich, velvety base for the cream sauce, making this the easiest, most satisfying version of beef stroganoff you will ever pull together on a weeknight.
Instructions
- Prepare Brown Gravy
Prepare Pioneer Brown Gravy Mix according to package directions. Set aside.
- Brown Beef and Vegetables
Saute beef, mushrooms and onions in butter in a large pot until lightly browned.
- Simmer with Gravy
Add ketchup, bay leaf and gravy to beef mixture. Simmer over low heat 15 to 20 minutes, stirring often. Remove bay leaf.
- Serve Over Noodles
Serve topped with sour cream or yogurt over cooked egg noodles. If desired, sour cream or yogurt can be mixed into stroganoff just prior to serving. Do not boil after adding sour cream or yogurt.
