Smoky Country Bacon Egg Bites Recipe
Smoky Country Bacon Egg Bites are the meal-prep breakfast that makes Monday mornings something to look forward to — crispy hash brown cups filled with a rich, smoky bacon gravy, beaten eggs, and melted cheddar that bake up into portable, satisfying bites you can grab on the way out the door or serve alongside everything else at brunch. Ingredients
2 tbsp oil
2 cups frozen hash browns, shredded
1/2 cup green onions, sliced
1 pkg Pioneer® Smoky Country Bacon Gravy Mix
1 cup water
1 cup shredded cheddar cheese
6 eggs, beaten
These Smoky Country Bacon Egg Bites use Pioneer Smoky Country Bacon Gravy Mix to give each bite its signature smoky, savory depth that makes these meal-prep breakfast cups far better than any version you would find in a coffee shop.
Instructions
- Preheat and Prep Pan
Preheat conventional oven to 350°F. Liberally oil a 12-cup muffin pan with non-stick spray.
- Brown Hash Browns and Onions
Heat oil in a medium saute pan and brown hash browns. Add the green onions and cook until softened.
- Make Gravy Mixture
Whisk 1 pkg. Pioneer Smoky Country Bacon Gravy Mix with 1 cup of water in a small bowl and add the slurry to the pan. Bring to a boil and let simmer for 1 minute. Remove from heat and put in a medium mixing bowl.
- Add Cheese and Eggs
Stir in the cheese and let cool for 3 minutes. Add the beaten eggs and whisk vigorously.
- Fill the Muffin Pan
Divide the egg mixture evenly into the 12 wells of the muffin pan.
- Bake and Cool
Bake in oven for 16-18 minutes. Remove from pan to cool.
