Pat Green’s Country-Style Eggs Benedict Recipe

Country-Style Eggs Benedict is the Southern answer to the brunch classic — homemade biscuits in place of English muffins, perfectly fried eggs, crispy sausage patties, and a creamy peppered gravy that stands in for traditional hollandaise with more flavor and far less effort. Once you try it, you will understand why it has its own devoted following.

Ingredients

1 1/2 cups Pioneer® Buttermilk Biscuit & Baking Mix
½ cup milk
As needed oil
8 large eggs
1 pkg Pioneer® Peppered Gravy Mix
8 pc precooked sausage patties
8 pc cheddar cheese slices

This Pat Green’s Country-Style Eggs Benedict uses Pioneer Peppered Gravy Mix as the signature gravy hollandaise that gives this Southern brunch classic its rich, creamy, deeply peppery finish over biscuits, eggs, and sausage.

Instructions

  1. Preheat the Oven

    Preheat a conventional oven to 450°F.

  2. Mix and Cut Biscuits

    Add the Pioneer Buttermilk Baking Mix to the milk in a medium bowl and mix well with a spatula. Turn dough onto a floured surface and knead 3-4 times. Roll out the dough to ½ – inch thickness and cut with a 3-inch biscuit cutter without twisting. To make 4 biscuits, the dough will need to be reworked one time.

  3. Bake and Slice Biscuits

    On a lightly oiled or parchment-lined baking sheet, bake the biscuits for 11-13 minutes and set aside to cool. Once cool enough to handle, slice each biscuit in half lengthwise.

  4. Fry the Eggs

    While the biscuits are baking, heat oil in a nonstick skillet and make 8 fried eggs according to desired doneness.

  5. Prepare Peppered Gravy

    Prepare the Pioneer Peppered Gravy Mix according to back of package instructions.

  6. Heat Sausage Patties

    Reheat the precooked sausage patties according to back of package instructions.

  7. Assemble and Serve

    To build the country-style eggs benedict, place a sausage patty on each biscuit bottom and top, then layer with a slice of cheddar cheese, a fried egg, and a ladle of gravy.
