Gravy-Infused Risotto Recipe
Gravy-infused risotto is the dinner that sounds like a restaurant dish but is actually more forgiving than classic risotto — starchy arborio rice slowly absorbs a rich turkey broth and finishes with Parmesan until it reaches that luxurious, creamy consistency that makes a perfect risotto one of the most satisfying things you can put on a plate. The gravy does the heavy lifting on flavor so you can focus on the stir.

Ingredients
6 cups turkey broth, divided
1 (1.41 oz) pkg Pioneer® Roasted Turkey Gravy Mix
1 tbsp olive oil
1 tbsp unsalted butter
1 large shallot, finely chopped
1 1/2 cups arborio rice
1/2 cup grated Parmesan cheese
2 tbsp chopped fresh parsley, for garnish
This Gravy-Infused Risotto uses Pioneer Roasted Turkey Gravy Mix to bring a deeply savory, full-bodied flavor to the broth that transforms this creamy, Parmesan-finished risotto into a standout dish at any table.
Instructions
- Make Gravy Broth
Bring 5 1/2 cups of broth to a boil over high heat. Meanwhile, whisk together Pioneer Roasted Turkey Gravy Mix and remaining broth together in a small bowl. Pour gravy mixture into the boiling broth, whisking constantly until completely incorporated, about 1 minute. Reduce heat to low to keep the mixture warm.
- Cook the Risotto
Heat the olive oil and butter in a large, deep skillet over medium heat. Add the shallot and cook until tender, about 2 minutes. Stir in the rice, and toast for 1 minute. Add the reserved gravy mixture, one ladle at a time, stirring constantly until liquid is just absorbed. Continue until the rice has absorbed most of the liquid and desired consistency is reached, about 20-30 minutes. Top with Parmesan cheese and parsley, and serve.
