Sloppy Joe Cornbread Cups Recipe
Sloppy Joe Cornbread Cups take two all-time comfort food favorites and put them together in one handheld package that is almost impossible not to love. Sweet, crumbly cornbread cradling a generous scoop of saucy, savory sloppy joe filling — this is the kind of fun weeknight dinner that actually gets kids excited at the table.

Ingredients
2 pkgs (6 oz) Pioneer® Yellow Corn Muffin Mix
2 large eggs, beaten
1 cup whole milk
1 lb ground beef
1/2 cup chopped yellow onion
1 pkg Williams Sloppy Joe Seasoning Mix
1 can (8 oz) tomato sauce
1 cup shredded cheddar cheese
Sour cream, for garnish
Chopped fresh green onion, for garnish
These Sloppy Joe Cornbread Cups use Pioneer Corn Muffin Mix for the perfect golden base that holds up to every saucy, savory bite of classic sloppy joe filling.
Instructions
- Preheat and Grease Muffin Tin
Preheat conventional oven to 400°F. Lightly grease 12-cup muffin tin with cooking spray and set aside.
- Mix and Bake Cornbread
Whisk together Pioneer Corn Muffin Mix, eggs and milk in medium bowl until just combined. Spoon batter evenly into prepared muffin tin, filling each cup about two-thirds full. Bake until tops are golden-brown and toothpick inserted into center comes out clean, about 12-15 minutes.
- Brown the Beef
Meanwhile, cook beef and onion in large skillet over medium heat, breaking up into small crumbles with wooden spoon, until beef is browned and onion is tender, about 5-7 minutes.
- Make the Sloppy Joe Mixture
Add Williams Sloppy Joe Seasoning Mix and tomato sauce, stirring until meat is coated. Bring mixture to a simmer and heat until sauce thickens slightly, about 2-3 minutes.
- Fill and Top with Cheese
Scoop out centers of cornbread muffins using spoon to create small cavities. Return to muffin tin and fill each cornbread cup with about 1-2 tablespoons of Sloppy Joe mixture. Top each muffin generously with cheddar cheese and bake until cheese is melted, about 5-7 minutes.
- Garnish and Serve
Remove from oven and let cool slightly. Garnish with dollops of sour cream and green onions and serve.
