Southwest Cornbread Pie Recipe
Southwest Cornbread Pie is the weeknight dinner that brings all the boldest flavors of the Southwest together in one pan — seasoned shredded chicken, roasted poblanos, cilantro, and a creamy chicken gravy topped with a sweet, golden cornbread crust that bakes over the filling and absorbs all that spiced, savory goodness from below. This is the casserole that needs nothing else on the plate.

Ingredients
2 cups Pioneer® Roasted Chicken Gravy Mix, prepared
6 oz (pk.) Pioneer Yellow Cornbread Mix
2 tbsp Vegetable Oil
1 Onion, diced
2 Poblano peppers, diced
½ lb Cooked chicken, shredded or diced
2 cloves Garlic, sliced
½ bunch Cilantro, washed and chopped
This Southwest Cornbread Pie uses Pioneer Roasted Chicken Gravy Mix for the rich, seasoned sauce and Pioneer Yellow Cornbread Mix for the golden topping that together make this one-dish Southwestern dinner completely satisfying.
Instructions
- Preheat and Prep Dish
Preheat conventional oven to 375°F and prepare a 13×9 inch casserole dish with non-stick spray. Set aside.
- Prepare the Gravy
Prepare Pioneer Roasted Chicken Gravy, per package instructions, then set aside.
- Sauté Vegetables and Chicken
Saute onions and poblanos in oil until softened. Add chicken, garlic, and cilantro and saute for one minute longer.
- Build the Filling
Add prepared gravy to chicken mixture and stir to combine, then add to prepared casserole dish.
- Mix Cornbread Batter
Prepare Pioneer Yellow Cornbread Mix batter by adding the egg and milk, per package instructions, and mixing with a spoon until combined.
- Top with Cornbread
Add the batter to the casserole dish and spread it on top of the chicken and gravy mixture.
- Bake and Serve
Bake 20-25 minutes, until golden brown, and serve. Tip: Great way to utilize leftover chicken.
