Stuffed Peppers with Country Gravy and Grits Recipe

Ingredients

3/4 cup Quick Grits
1 pkg Pioneer® Country Gravy Mix
1/4 tsp Salt
2 cups Monterey Pepper Jack Cheese, shredded, divided
12 ea Mini Bell Peppers, cut in half and deseeded

These Stuffed Peppers with Country Gravy and Grits use Pioneer Country Gravy Mix for the rich, perfectly seasoned gravy that makes this Southern stuffed pepper recipe a true one-of-a-kind comfort food dinner.

Instructions

  1. Preheat the Oven

    Preheat oven to 350°F.

  2. Prepare the Country Gravy

    In a large saucepot, prepare Pioneer Country Gravy Mix to package instructions. Add an additional 2 cups of water. Slowly bring the mixture to a simmer.

  3. Cook the Grits

    Add grits and bring to a simmer while stirring consistently.

  4. Finish and Cool Grits

    Cook for 5 to 7 minutes on low heat. Fold in 1 cup pepper jack cheese and allow to cool slightly.

  5. Fill the Peppers

    Place a spoonful of grits in the cavity of each bell pepper and top with remaining cheese.

  6. Bake Until Melted

    Bake for 5-10 minutes or until cheese is melted and golden brown.
