Stuffed Peppers with Country Gravy and Grits Recipe

Ingredients
3/4 cup Quick Grits
1 pkg Pioneer® Country Gravy Mix
1/4 tsp Salt
2 cups Monterey Pepper Jack Cheese, shredded, divided
12 ea Mini Bell Peppers, cut in half and deseeded

Instructions
- Preheat the Oven
Preheat oven to 350°F.
- Prepare the Country Gravy
In a large saucepot, prepare Pioneer Country Gravy Mix to package instructions. Add an additional 2 cups of water. Slowly bring the mixture to a simmer.
- Cook the Grits
Add grits and bring to a simmer while stirring consistently.
- Finish and Cool Grits
Cook for 5 to 7 minutes on low heat. Fold in 1 cup pepper jack cheese and allow to cool slightly.
- Fill the Peppers
Place a spoonful of grits in the cavity of each bell pepper and top with remaining cheese.
- Bake Until Melted
Bake for 5-10 minutes or until cheese is melted and golden brown.
