Apple Cranberry Stuffed Pork Loin Recipe
Cranberry & Apple Stuffed Pork is the showstopper roast for the holiday table that looks far more complicated than it is. Sweet cranberry and tart apple tucked inside a tenderloin with warm spice — sliced at the table, it is a meal that earns every compliment it gets.

Ingredients
1/2 cup olive oil, divided
1 medium yellow onion, diced
1 Granny Smith apple, peeled, cored and diced
1/4 cup dried cranberries
1/4 cup chopped walnuts
1 clove garlic, minced
3 tbsp fresh rosemary, chopped, plus more to garnish
1 1/2 tsp kosher salt
1/2 tsp ground black pepper
1 (1 1/2 lb) boneless pork tenderloin
1 (2 oz) pkg Pioneer® Smoky BBQ Pulled Pork Seasoning
2 cups water, divided
1 (2 oz) pkg Reduced Sodium Brown Gravy Mix
This Apple Cranberry Stuffed Pork Loin recipe uses Pioneer Smoky BBQ Pulled Pork Seasoning to add a subtle, smoky depth to the pork that pairs beautifully with the sweet apple pork stuffing inside.
Instructions
- Preheat and Prep Pan
Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
- Cook the Stuffing
Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add onions and apples and cook until tender, about 5 minutes. Add cranberries, walnuts, garlic, rosemary, salt and pepper and remove from heat.
- Stuff and Roll Pork
Cut pork lengthwise, making sure not to cut all the way through, and open like a book to create a flat surface. Place pork between 2 sheets of plastic wrap, and pound until 1/2-inch-thick. Rub pork evenly with remaining olive oil and Pioneer Smoky BBQ Pulled Pork Seasoning Mix. Spread apple mixture evenly over the pork, leaving a 1/2 inch border. Roll the pork tightly around the fillings and secure with toothpicks or twine.
- Roast and Rest Pork
Transfer pork to the prepared baking sheet. Bake 30-35 minutes, or until an internal temperature of 145°F is reached. Allow pork to rest at room temperature at least 5-10 minutes before slicing.
- Make and Serve Gravy
Meanwhile, bring 1 1/2 cups of water to a boil over high heat. Whisk together Pioneer Brown Gravy Mix and remaining water in a small bowl. Pour gravy mixture into the boiling water, whisking constantly until completely smooth and thickened, about 1 minute. Garnish pork with rosemary, and serve with gravy.
