Roasted Pork with Mushroom Gravy Recipe
Mushroom Gravy Roasted Pork is the Sunday dinner that makes the whole week feel like it got started on the right note. Herb-seasoned pork roasted until perfectly tender, finished with a rich, earthy mushroom gravy that is sophisticated enough for company and simple enough for a Tuesday.

Ingredients
1 (2 lb) boneless pork loin
1/4 cup olive oil, divided
1 (2 oz) pkg Pioneer® Smoky BBQ Pulled Pork Seasoning Mix
1 lb button mushrooms, sliced
1 tsp kosher salt
1/2 tsp ground black pepper
2 cups water, divided
1 (2 oz) pkg Pioneer® Au Jus Gravy Mix
2 tbsp chopped fresh thyme, plus more for garnish
This Roasted Pork with Mushroom Gravy recipe uses Pioneer Smoky BBQ Pulled Pork Seasoning to give the roast its deeply savory crust, paired with a rich mushroom gravy that makes this pork dish a genuinely memorable dinner.
Instructions
- Preheat and Prep Pan
Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
- Season, Roast, and Rest
Rub loin evenly with 3 tablespoons of olive oil and Pioneer Smoky BBQ Pulled Pork Seasoning Mix. Transfer to the prepared baking sheet. Cook 30-35 minutes, or until an internal temperature of 145°F is reached. Allow pork to rest at room temperature at least 5-10 minutes before slicing.
- Sauté the Mushrooms
Meanwhile, heat oil in a skillet over medium-high heat. Add mushrooms, salt and pepper, and cook until tender, about 3-5 minutes. Set aside.
- Make Mushroom Gravy
Bring 1 1/2 cups of water to a boil over high heat. Whisk together Pioneer Au Jus Gravy Mix and remaining water in a small bowl. Pour gravy mixture into the boiling water, whisking constantly until completely smooth and thickened, about 1 minute. Add in reserved mushrooms and thyme. Garnish pork with more thyme, and serve with mushroom gravy mixture.
