Southwestern Meatloaf Recipe
Southwestern Meatloaf takes the old-fashioned comfort of meatloaf and wakes it up with smoky, bold flavor that makes it feel brand new. Chili-spiced ground beef packed with peppers and baked to a beautiful caramelized crust — this is the dinner that earns a permanent spot in the rotation.

Ingredients
1 lb Ground Beef
1 10 oz can Diced Tomatoes with Chilies, drained
1 pkg Chili Seasoning Mix
2 large Eggs
5 cups Corn Chips, divided
1 medium Onion, diced, divided
8 oz Cheddar Cheese, shredded, divided
1 pkg Brown Gravy Mix
6 oz Tomato Paste
This Southwestern Meatloaf Recipe gets its bold, smoky kick from Pioneer® or Williams Chili Seasoning, making it the most flavorful southwest meatloaf you can pull from the oven on a weeknight.
Instructions
- Preheat and Prep Pan
Preheat oven to 350°F. Lightly oil a 9×5-inch loaf pan.
- Mix the Meatloaf
In a large bowl, mix together raw ground beef, diced tomatoes with chilies, Pioneer Chili Seasoning, eggs, 4 cups corn chips, ¾ cup diced onion, and 4-ounces shredded cheddar cheese.
- Form and Pan the Loaf
Form mixture into a loaf and place into prepared pan.
- Prepare the Brown Gravy Sauce
In a saucepan, combine Pioneer Brown Gravy Mix, tomato paste, and 2 cups cool water. Whisk the mixture together until an even consistency.
- Simmer and Top with Sauce
Slowly bring the mixture to a simmer over medium heat. Pour half of the prepared sauce over the raw meatloaf.
- Bake Until Done
Bake for 1 hour or until internal temperature reaches 165°F.
- Melt the Cheese Topping
Remove from oven and top with remaining cheddar cheese. Bake for an additional 5 minutes or until cheese is melted.
- Garnish and Serve
To garnish, top with remaining sauce, diced onion, corn chips, and green onions.
