Corn Griddle Cakes


2 large eggs, beaten
1 2/3 cups milk
4 tbsp melted butter or vegetable oil
1 1/4 cups Pioneer flour
1 cup Pioneer Yellow or White Corn Meal
2 1/4 tsp baking powder
2 tbsp sugar
1 tsp salt

Preparation Instructions:

1. Preheat griddle or frying pan to 375˚F.
2. In a large mixing bowl, combine the eggs, milk, and melted butter or vegetable oil.
3. In a medium bowl, combine the flour, corn meal, baking powder, sugar, and salt.
4. Add the dry ingredients to the wet ingredients and mix thoroughly until a batter forms.
5. Pour the batter by 1/4 cupful onto the hot, greased griddle or frying pan and cook 1-2 minutes per a side, turning only when bubbles appear on the top and the edges appear dry. Serve hot with syrup.
